The idea was born to produce a champenoise method sparkling wine: from here the (risky) choice of Riesling. From here a big wine, Zoe, is the most awarded and appreciated. And Barone Bianco, his still version. The experience includes a vertical of vintages of both the white and the sparkling wine.

Riesling has grown on the steepest and most calcareous area of the vineyard, an ambitious experiment by the lawyer and father Francesco Pacelli which is already giving great satisfaction, especially with Zoe, our classic method sparkling wine. The harvest of the Barone Bianco (still Riesling), as for the Zoe, is about fifteen days earlier than the other harvests in the area and takes place immediately after or just before August 15th. The climate is regulated by the altitude - 350 meters above sea level - hot during the summer months and cold during the winter, with significant temperature variations between day and night, an ideal circumstance to enhance the perfumes and aromas of the wine. Tenute Pacelli has also created a passito, Eos, from 100% Trebbiano Toscano grapes.
