Il Maiolo is an organic winery located at the foot of the historic Val Nure region of Northern Italy. We use only the finest traditional winemaking methods passed down from generations to create truly unique and memorable wines. Time is an important element of our process. Our long aging approach requires careful patience and meticulous details to create a taste rich in history. Each bottle of red wine takes approximately five years to create from the first harvest to the sale. The freshness of the white grapes allows for a wine to be bottled two years after the grapes have been harvested. Our winemaking process follows the same methods used for hundreds of years with soft pressing in steel tanks where the first fermentation takes place. This is followed by 10 pumping overs and, when the must is dry, it is racked and transferred to large oak barrels where it undergoes malolactic fermentation.
