Vinification and refinement
The harvest takes place in September. After a soft pressing and destemming, fermentation takes place in 50 hl steel tanks. The wine is aged in 5 hl oak barrels for at least 6 months. From the oldest vineyard, it is the company's historic wine. Aged in the tonneau, from 2009 to today, it has the same elegance, structure, and complexity as the first red-signed Pacelli.
