In the past centuries Castenedolo has been one of the preferred destinations by the rich and aristocratic families of the city in order to pass the summer months, enjoying the rural quiet of the countryside and vineyards. Taking a look to the south, during the sunny days it's possible to see the Appennins' shape, enjoying the view of this beautiful lanscape.
After the harvest, usually done in the second week of September, a very short skin contact (like not more than three or four hours max) before moving into the pressing machine to remove skin and seeds and then, finally, the fermentation can starts at temperature controlled between 18°-22°C to preserve freshness and fruity taste. Usually the official presentation of this wine is done on St. Valentine's day. The careful and meticulous care in the vineyard and in the cellar allowed this wine to have a low content of histamine (less than 0,5mg/liter) as indicated in the "Low Histamines research".
Grapes: 100% local red grape from Garda Lake area, the same used in the "Low Histamines" selection for the "M" wine.

Perfume: pleasant perfume, persistent, clean with some remind of violet, strawberry jam and wild cherry.
Taste: fresh, savory with a pleasantly soft finish.

Service temperature: 10°C/50° F.
Matching: its smooth taste is perfect for some appetizers, cheese and ham. Try it with a seafood risotto or some light-spicy food.
