Vinification and refinement
The harvest takes place towards the end of November. After drying on the plant, fermentation takes place in 50 hl steel tanks. The refinement takes place in 5 hl cherry barrels, for at least 6 months and another 6 months in the bottle before being put on the market.
EOS is a straw wine with an amber-yellow color. On the nose, it is intense and complex with aromas of candied fruit, apricot, and white peach. On the palate, it is soft and fresh.
Food pairings and serving temperature
EOS passito is a wine that pairs well with blue cheeses and ricotta or fruit-based desserts. The serving temperature is approximately 16°-18°C.
